This easy baingan bharta recipe is going to be a sure shot hit at home! Baingan (eggplant/au-bergine) is studded with garlic and roasted on an open flame, and then stir-fried with aromat¬ics for the most delicious smoky flavor.
2 Tablespoons Purti Kachi Ghani Oil
1 Onion (Chopped)
1 Inch Ginger (Chopped)
4 Cloves Garlic (Chopped)
2 Tomato (Chopped)
2 Green Chillies (Chopped)
1 Teaspoon Red Chilli Powder
2 Tablespoons Coriander Leaves (Chopped)
Step 1: Prepare ingredients as mentioned in the list.
step 2: Roast the brinjal on an open flame or grill it till soft inside and burnt outs Then, wash it under a tap to remove all the burnt skin, remove the leftover skin by hand, peel it properly and mash it well.
Step 3: Heat oil in a karahi, fry the chopped onions till golden brown. Add ginger, garlic and fry for 5 minutes. Now add the tomatoes and saute till soft.
Step 4: Add green chillies, red chilli powder and sauté for a minute. Add the mashed brinjal, salt and mix well. Continue to sauté till the mixture is well blended.
Step 5: Serve hot, garnished with coriander leaves.
