Experience the authentic taste of Bengal with this Phoolkopir Rezala recipe, where the flavors of cauliflower, potatoes, and peas come together in a delightful curry, enriched with the goodness of Purti Sunlife Refined Sunflower Oil.
– 1 medium-sized cauliflower (phoolkopi)
– 1 cup green peas
– 2 large potatoes, diced
– 1 large onion, finely chopped
– 2 tomatoes, pureed
– 1/2 cup yogurt
– 2 tbsp ginger-garlic paste
– 1 tsp cumin seeds
– 1 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp garam masala
– Salt to taste

1) Heat Purti Sunlife Refined Sunflower Oil in a pan. Add cumin seeds and let them splutter.
2) Add finely chopped onions and sauté until golden brown. Add ginger-garlic paste and cook until the raw aroma disappears.
3) Stir in the tomato puree and cook until the oil separates. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
4) Whisk the yogurt and add it to the masala. Cook until the masala is well-cooked and the oil starts to separate.
5) Add cauliflower florets, diced potatoes, and green peas. Mix thoroughly, ensuring the vegetables are well coated with the masala.
6) Cover the pan and cook on low heat until the vegetables are tender, stirring occasionally.
7) Sprinkle garam masala and give it a final mix. Adjust salt and spices according to taste.
8) Garnish with fresh coriander leaves and serve hot with rice or Indian bread.
