One of the best unusual mutton recipes is Zafrani Mutton Korma. Zafrani mutton korma is a classic mutton dish that is cooked with rich, flavorful spices that are aromatic. This delectable and distinctive royal cuisine is prepared exclusively for special occasions.
Ingredients:
• Mutton (boneless and cubed)
• Onions (finely chopped)
• Ginger-garlic paste
• Cashews (soaked)
• Almonds (soaked)
• Salt to taste
• Saffron strands
• Milk
• Heavy cream
• Purti Soyalite Refined Soyabean Oil
• Spices: Cumin, coriander, cardamom, cloves, bay leaf, cinnamon, turmeric, red chili powder, garam masala
• Ghee (for tempering)
Instructions:
Step 1 : Pressure Cook the Mutton: Pressure cook the mutton with ginger-garlic paste, turmeric powder, salt, and water until tender.
Step 2 : Prepare the Curry Paste: Grind together curd, ginger-garlic paste, fried onion, red chili powder, coriander powder, salt, cumin powder, green chillies, soaked cashews, and a little water.
Step 3 : Infuse Saffron: Soak saffron in kewra water.
Step 4 : Sauté the Mutton: Sauté the cooked mutton with red chili powder, garam masala, butter, and lemon juice until the water evaporates.
Step 5 : Cook the Curry Base: Heat Purti Soyalite Oil in a pan, add whole spices, and sauté. Add the curd mixture and cook until the Purti Soyalite Oil separates.
Step 6 : Combine Mutton and Curry: Add the sautéed mutton to the curry, mix well, and add water from the pressure cooker.
Step 7 : Simmer and Garnish: Simmer until the gravy thickens, then add crushed fried onion, garam masala, saffron, ginger juliennes, green chillies, kasuri methi, and chopped coriander.
Step 8 : Serve: Serve hot with naan or rice.
