1. Prepare the Baati: Baking time: 25-30 mins.
Mix the whole wheat flour, semolina, ajwain, salt, and ½ cup pure Ghee until the mixture reaches a crumbly, breadcrumb-like texture. Gradually add water to knead a very firm dough. Shape into tight, round balls. Bake in a preheated oven or traditional baati oven at 180°C until golden brown and cooked through.
2. Cook the Dal: Simmer time: 10 mins.
Pressure cook the mixed dals with turmeric, salt, and water until soft. Heat Purti Sunlife Sunflower Oil in a pan; add cumin seeds and hing. Sauté the onions, ginger-garlic paste, and green chillies until golden, then cook the tomatoes with the remaining spices until the oil separates. Stir in the cooked dal, adjust consistency with water, simmer for 8–10 minutes, and garnish with fresh coriander.
3. Make the Churma: Frying & Blending: 15 mins.
Knead a stiff dough with wheat flour and water, then shape it into flat dumplings (muthias). Heat Purti Premium Vanaspati in a deep frying pan and fry the muthias on low-medium heat until golden brown and cooked inside. Let them cool for a few minutes until warm, break them into pieces, and grind into a fine powder. Mix in the jaggery/sugar, cardamom powder, and chopped dry fruits.
4. Assemble & Serve: Ready to enjoy.
