Introduction:

Achari Paneer, a delightful vegetarian dish from the heart of Indian cuisine, is a culinary masterpiece that perfectly balances the creamy richness of paneer with the piquant tang of Indian pickles (“achar”). It’s a symphony of flavors that tantalizes the taste buds, offering a unique and satisfying culinary experience.

Ingredients:

  • – 250g Paneer, cubed
  • – 2 tbsp Purti Kachi Ghani Mustard Oil
  • – 1 tsp Mustard seeds
  • – 1 tsp Fenugreek seeds
  • – 1 tsp Fennel seeds
  • – 1/2 tsp Nigella seeds (Kalonji)
  • – 1 tsp Red chili powder
  • – 1/2 tsp Turmeric powder
  • – 1 tsp Coriander powder
  • – 1/2 tsp Garam masala
  • – 1 inch Ginger, grated
  • – 2 Green chilies, slit
  • – 2 Tomatoes, pureed
  • – 1/4 cup Yogurt (optional)
  • – Salt to taste
  • – Fresh coriander leaves, for garnish

Instructions:

  • 1. Prepare the Achari Masala: In a dry pan, lightly roast mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds until they release their aroma. Grind them into a coarse powder.

  • 2. Cook the Masala: Heat Purti Kachi Ghani Mustard Oil in a pan. Add the ground achari masala, red chili powder, turmeric powder, and coriander powder. Sauté for a minute.

  • 3. Add Ginger and Chilies: Add grated ginger and slit green chilies. Sauté for another minute.

  • 4. Add Tomato Puree: Add the tomato puree and cook until the oil separates from the masala.

  • 5. Add Yogurt (Optional): If using, whisk yogurt and add it to the masala. Cook until it thickens.

  • 6. Add Paneer: Add the paneer cubes and mix gently. Add salt to taste.

  • 7. Simmer: Add a little water if needed and simmer for 5-7 minutes, allowing the paneer to absorb the flavors.

  • 8. Garnish: Sprinkle garam masala and fresh coriander leaves.

  • 9. Serve: Serve hot with roti, naan, or rice.

Key Culinary Notes:

1. The balance of spices is crucial in Achari Paneer. Too much of any one spice can overwhelm the dish.

2. Fresh, high-quality paneer is essential for optimal flavor and texture.

3. The use of good quality mustard oil, like Purti Kachi Ghani Mustard Oil, greatly enhances the overall taste.
