These cookies, made with the goodness of Purti Vanaspati, are a treat for both festive occasions and everyday indulgence. Their unique texture, golden-baked color, and melt-in-mouth flavor make them a favorite across generations.
Ingredients:
– 1 cup Purti Vanaspati
– 1 cup powdered sugar
– 1 1/2 cups all-purpose flour (maida)
– 1/2 cup desiccated coconut
– 1/4 cup finely chopped cashew nuts
– 1 tsp baking powder
– 1/2 tsp cardamom powder (optional, for a hint of aroma)
– A pinch of salt
Preparation:
– Step 1: Creaming the Base
In a mixing bowl, beat Purti Vanaspati and powdered sugar together until light and fluffy. This forms the creamy base of your cookie dough.
– Step 2: Mixing Dry Ingredients
Sift in the all-purpose flour, baking powder, salt, and cardamom powder. Fold in gently to combine with the creamed mixture.
– Step 3: Add Coconut & Cashew
Add desiccated coconut and chopped cashew nuts into the dough. Mix until a soft, pliable dough forms. If needed, add 1-2 tbsp of milk to bring everything together.
– Step 4: Shaping
Preheat your oven to 170°C (340°F) Roll the dough into small balls, flatten them slightly, and place on a baking tray lined with parchment paper.
– Step 5: Baking
Bake for 12 – 15 minutes or until the edges are golden brown. Let the cookies cool on a wire rack to firm up completely.
