Soya Chunks Curry is a wholesome recipe prepared with soya chunks tossed in a flavourful gravy. The gravy is prepared by mixing the onion-tomato paste in a melange of spices which leads to an exceptionally flavoured curry. Ingredients of Soya Chunks Curry

 

  • 2 cup soya chunks
  • 4 cloves garlic
  • 2 small chopped tomato
  • 2 tablespoon Purti vegetable oil
  • 1 bay leaf
  • 1 inch cinnamon stick
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • 1 piece sliced green chilli
  • 2 small thinly sliced onion
  • 1 inch grated ginger
  • 8 piece cashews
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric
  • 1 teaspoon coriander powder
  • 1/4 cup yoghurt (curd)
  • 1 teaspoon kasoori methi leaves
  • salt as required

 

How to make Soya Chunks Curry

·         Step 1 Boil the soya chunks

Add soya chunks to a pot, add sufficient water and boil them. Keep boiling until they swell up. Once boiled well, soak them in water at room temperature. After 5 minutes, squeeze out all the excess water and collect the chunks in a bowl.

·         Step 2 Prepare the paste

Heat Purti oil in a kadhai and add 1 chopped onion, garlic, and ginger. Saute them well. Next, add cashews and tomatoes. Saute them well for about 5-6 minutes and then let them cool down a bit. Now transfer the mixture to a blender. Blend to form a smooth paste.

·         Step 3 Make the curry

Now, in a different kadhai, heat Purti oil and add cinnamon stick, bay leaf, and cumin seed. Saute them well. Then add 1 sliced onion and saute again. Add turmeric and chilli powder followed by the prepared paste. Saute it again. Now, add coriander powder, curd, salt, and 1 cup of water. Mix everything well.

·         Step 4 Add soya chunks to the curry

Finally, add soya chunks to the curry. Cover it with a lid and let it simmer for about 8 mins. Once done, add kasoori methi and garam masala. Mix everything well and let it cook for 2 more minutes. Switch off the gas flame now.

·         Step 5 Your Soya Chunks Curry is ready to be served

Garnish the curry with sliced green chillies. Your Soya Chunks Curry is now ready. Serve it alongside rice or chapati. Enjoy the meal.
