Creamy Kaju Paneer Masala with Purti Sunlife Oil

Introduction:

Kaju Paneer Masala is a luxurious North Indian vegetarian curry that brings together the creamy richness of cashews (kaju) and the soft, protein-packed goodness of paneer. Ingredients:

For the Curry Base:

– 200g paneer (cubed)

– 15-20 cashew nuts (kaju)

– 2 medium onions (finely chopped)

– 2 medium tomatoes (pureed)

– 1 green chili (slit)

– 1 tsp ginger-garlic paste

– 2 tbsp Purti Sunlife Refined Sunflower Oil

– 1 tsp cumin seeds

– 1/2 tsp turmeric powder

– 1 tsp red chili powder

– 1 tsp coriander powder

– 1/2 tsp garam masala

– Salt to taste

– 1/2 cup milk or fresh cream

– Fresh coriander leaves for garnish

Preparation:

Step 1: Prepare the Cashew Paste

Soak the cashew nuts in warm water for15 – 20 minutes. Grind into a smooth paste using a little water and set aside.

Step 2: Saute the Paneer

Heat Purti Sunlife Refined Sunflower Oil in a non-stick pan. Lightly saute the paneer cubes until golden on the edges. Remove and keep aside.

Step 3: Make the Gravy

In the same oil, add cumin seeds. Once they splutter, add chopped onions and saute until golden brown. Add ginger-garlic paste and green chili; saute until the raw smell disappears.

Add turmeric, red chili, and coriander powder. Mix well, then pour in the tomato puree. Cook on medium heat until the oil separates from the masala.

Step 4: Add Cashew Paste & Paneer

Stir in the cashew paste and cook for 3-4 minutes. Add milk or fresh cream and simmer for another 2 minutes. Now, gently add the sauteed paneer cubes. Let it all simmer for 5-6 minutes on low flame.

Step 5: Final Touch

Sprinkle garam masala and mix well. Garnish with chopped coriander leaves.
