Introduction:
Kheera Goja is a beloved sweet delicacy from the eastern Indian state of Odisha, especially prominent during religious festivals, temple offerings, & celebratory occasions. Known for its layered, flaky texture and rich milky flavor, Kheera Goja is a part of the traditional Odia cuisine, which reflects the cultural depth of Jagannath temple rituals & temple prasad.
Ingredients:
– Maida (Refined Flour) – 1 cup
– Kheera (Thickened Milk) – 1/2 cup
– Sugar – 1/2 cup (for syrup)
– Cardamom Powder – 1/2 tsp
– Ghee or Butter – 2 tbsp (for dough)
– Water – as needed

– Chopped Pistachios or Almonds – optional, for garnish
Preparation:
Step 1: Prepare the Sugar Syrup
– In a pan, add 1/2 cup sugar and 1/2 cup water. Heat until it forms a one-string consistency.
– Add cardamom powder. Keep the syrup warm.
Step 2: Prepare the Dough
– In a mixing bowl, combine maida, thickened milk (kheera), ghee, and a pinch of salt.
– Mix to form a soft yet firm dough. Add a little water if needed.
– Cover and rest the dough for 20 minutes.
Step 3: Shaping the Goja
– Roll the dough into a thick sheet and cut into rectangular pieces.
– You can fold or twist the edges slightly for a traditional look.
Step 4: Frying to Perfection

– Fry the gojas on medium heat until golden and crispy.
– Remove and immediately dip them into the warm sugar syrup. Let them soak for 2-3 minutes.
Step 5: Garnish and Serve
– Garnish with chopped pistachios or almonds.
– Serve warm or allow them to cool and store in an airtight container.
