“Gobi Matar Sabzi” with Purti Ati Uttam Refined Palm Oil

“Gobi Matar Sabzi” is a beloved dish originating from North India, renowned for its simplicity and delightful combination of cauliflower and green peas. Paste Ingredients:

  • – 4 tbsp freshly grated coconut
  • – 8 garlic cloves
  • – 4 green chillies, roughly chopped
  • – 25 mm (1″) ginger, roughly chopped

 

Other Ingredients:

  • – 2 cups cauliflower florets
  • – 1 1/2 cups green peas
  • – 3/4 cup chopped onions
  • – 1/2 cup chopped coriander
  • – 1/2 tsp turmeric powder
  • – 2 tsp coriander-cumin seeds powder
  • – 1 tsp chilli powder
  • – 2 tbsp Purti Ati Uttam Refined Palm Oil
  • – Salt to taste

 

Prepare the Coconut Paste: In a mixer, combine freshly grated coconut, garlic cloves, green chillies, ginger, and 1/4 cup water. Blend until you achieve a smooth paste consistency.

 

Create the Marinade: In a deep bowl, mix together chopped onions, coriander, turmeric powder, coriander-cumin seeds powder, chilli powder, the prepared coconut paste, Purti Ati Uttam Refined Palm Oil, and salt. Ensure all ingredients are well combined to form a marinade.

 

Marinate the Vegetables: Add cauliflower florets and green peas to the marinade mixture. Stir well to coat the vegetables evenly. Allow the vegetables to marinate for 15 minutes, allowing the flavors to infuse.

 

Cooking Process: Transfer the marinated vegetables into a deep non-stick kadhai. Add 1 1/4 cups of water to the mixture. Cover the kadhai and cook the vegetables for 15 minutes. Initially, cook on high heat for 5 minutes, then reduce the flame to medium and cook for an additional 10 minutes. Stir the mixture every 5 minutes to ensure even cooking and prevent sticking.

 

Serve Hot: Once the vegetables are tender and cooked to perfection, serve the “Gobi Matar Sabzi” hot with your choice of Indian bread such as roti, bajra roti, or jowar roti.
