Ingredients You Need 

For the Rajma

  • 1 cup dried rajma (kidney beans)
  • 3–4 cups water, for soaking
  • 3 cups water, or as required for pressure cooking
  • 1 small bay leaf
  • 1-inch cinnamon stick
  • 2–3 cloves
  • Salt, to taste

For the Masala

  • 2 tablespoons Purti Kachi Ghani Mustard Oil
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped or pureed
  • 1 teaspoon ginger-garlic paste
  • 1–2 green chillies, finely chopped
  • ½ teaspoon cumin seeds
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½–1 teaspoon red chilli powder, according to taste
  • 1 teaspoon Kashmiri red chilli powder, optional
  • ½ teaspoon garam masala
  • Salt, to taste
  • ½–1 cup water, as required

For Garnishing

  • 1 tablespoon finely chopped fresh coriander leaves
  • A pinch of garam masala, optional

Method  

  1. Soak the rajma: Wash 1 cup rajma thoroughly and soak it in plenty of water for 8–10 hours or overnight. Drain and rinse before cooking.
  2. Pressure cook: Add the soaked rajma to a pressure cooker with fresh water, salt, bay leaf, cinnamon, and cloves. Cook until the rajma becomes completely soft and can be easily mashed with the back of a spoon.
  3. Prepare the masala: Heat 2 tablespoons Purti Kachi Ghani Mustard Oil in a kadai or heavy-bottomed pan. Add cumin seeds and let them crackle.
  4. Cook the onions: Add finely chopped onions and sauté until golden brown. Add ginger-garlic paste and green chillies, then cook briefly.
  5. Add tomatoes and spices: Add chopped or pureed tomatoes along with turmeric, coriander powder, red chilli powder, and salt. Cook until the tomatoes soften and the masala becomes thick.
  6. Add cooked rajma: Add the pressure-cooked rajma along with some of its cooking liquid. Mix everything well.
  7. Simmer: Lightly mash a few rajma beans to help thicken the gravy. Add garam masala and simmer on low to medium heat for 10–15 minutes, stirring occasionally.
  8. Garnish and serve: Finish with freshly chopped coriander leaves. Serve hot with steamed rice, jeera rice, roti, or naan.
