Instant and easy veg nugget

Veg Nuggets are a tasty and crispy starters and snacks that are prepared with mixed vegetables. They are quite easy to make and are popularly a fabulous alternative to chicken nuggets from the famous restaurants in town. This amazing recipe is extremely healthy and is equally loved by people of all ages. You can easily prepare the same in 30 minutes and serve them hot with a dash of tomato ketchup or chutney. So, let’s start with the recipe…

Ingredients:
Ingredients You would need to serve 3 persons
– 3/4 cup poha or rice flakes
– 2 large potatoes
– 1 medium carrot
– 3/4th cup green peas
– 1/2 teaspoon red chilli powder
– ½ teaspoon roasted cumin powder
– 1/2 teaspoon garam masala powder
– 3 tablespoons chopped coriander leaves
– 1 cup grated cheese
– 1/4 cup water
– salt to taste and oil for deep frying.

Directions:

Pulse the rice flakes or poha finely using the mixer grinder or blender. Boil and peel the potatoes, carrots and peas. Mash the vegetables thoroughly once done. Add the spices to the mixture – red chilli powder, cumin powder, garam masala powder, coriander leaves and salt. Add grated cheese and mix well. Now add the poha crumbs and mix well. Try to shape the nuggets and add one more tablespoon of crumbs if it doesn’t hold the shape. Mix 2 teaspoon of cornflour in 1/4 cup of water so that it doesn’t form lumps. Dip the nuggets into the cornflour slurry and roll over poha crumbs. Heat oil and deep fry the nuggets till they are golden brown. Drain in a kitchen towel and serve hot.
