Malpua recipe with purti vanaspati

Ingredients:

  • – 1 cup all-purpose flour
  • – 1 teaspoon fennel seeds (saunf)
  • – 3-4 crushed green cardamom pods or ⅓ teaspoon cardamom powder
  • – 3 tablespoons grated khoya (mawa)
  • – 3 tablespoons fresh yogurt
  • – ½ cup water
  • – ½ cup sugar
  • – ¼ cup water (for sugar syrup)
  • – 4 tablespoons Purti Vanaspati Ghee
  • – 3 pinches baking soda
  • – Almonds, pistachios, saffron for garnish

 

Instructions:

  • Step 1: In a mixing bowl, combine all-purpose flour, fennel seeds, and crushed cardamom pods. Mix well.
  • Step 2: Add grated khoya and fresh yogurt to the dry ingredients.
  • Step 3: Pour water gradually and whisk to form a thick, smooth batter without lumps. Cover and let it rest for 30 to 40 minutes.
  • Step 4: Meanwhile, blanch almonds and pistachios, peel and slice them. Set aside.
  • Step 5: Prepare sugar syrup by heating sugar and water until it reaches a 1-string consistency. Keep it warm.
  • Step 6: Heat Purti Vanaspati Ghee in a pan.
  • Step 7: Just before frying, add baking soda to the batter and mix evenly.
  • Step 8: Spoon the batter onto the hot ghee, spreading lightly to form pancakes. Fry until golden on both sides.
  • Step 9: Drain excess oil and immediately soak the fried Malpuas in warm sugar syrup.
  • Step 10: Coat them well with syrup and transfer to a serving tray.
  • Step 11: Garnish with chopped almonds, pistachios, and crushed saffron.
  • Step 12: Serve Malpuas warm and enjoy the delightful flavors!

 

Note: Adjust sugar quantity according to taste preference. Malpuas can be made thicker or thinner based on personal preference by adjusting the consistency of the batter with milk. Enjoy this delightful dessert with your loved ones and relish the rich flavors of Purti Vanaspati Ghee in every bite!
