Mushroom Tikka Masala

Introduction:  

Mushroom Tikka Masala is a delicious vegetarian adaptation of the beloved Indian classic, Chicken Tikka Masala. Bursting with aromatic spices and a creamy tomato-based gravy, this dish is a favorite among vegetarians and mushroom lovers alike. This recipe is prepared using Purti Soyalite Refined Soyabean Oil, which enhances the flavors while providing a light and heart-healthy base for cooking. 

Ingredients: 

For the Mushroom Tikka: 

  • 200g button mushrooms (cleaned and halved) 
  • ½ cup thick curd (yogurt) 
  • 1 tbsp gram flour (besan) 
  • 1 tsp ginger-garlic paste 
  • ½ tsp turmeric powder 
  • 1 tsp red chili powder 
  • 1 tsp garam masala 
  • Salt to taste 
  • 1 tbsp Purti Soyalite Refined Soyabean Oil 

For the Masala (Gravy): 

  • 2 tbsp Purti Soyalite Refined Soyabean Oil 
  • 1 bay leaf 
  • 1 large onion (finely chopped) 
  • 1 tsp ginger-garlic paste 
  • 2 tomatoes (pureed) 
  • ½ tsp turmeric powder 
  • 1 tsp red chili powder 
  • 1 tsp coriander powder 
  • ½ tsp cumin powder 
  • ½ tsp kasuri methi (dried fenugreek leaves) 
  • ½ cup fresh cream 
  • Salt to taste 
  • Fresh coriander leaves for garnish 

Instructions: 

Step 1: Prepare the Mushroom Tikka 
– In a bowl, combine yogurt, gram flour, ginger-garlic paste, and all the spices listed for the tikka. 
– Add the mushrooms and coat them evenly. 
– Heat Purti Soyalite Refined Soyabean Oil in a non-stick pan. 
– Sauté the marinated mushrooms until golden and slightly charred. Set aside 

Step 2: Make the Gravy 
– Heat Purti Soyalite Refined Soyabean Oil in a pan. Add bay leaf and sauté onions till golden brown. 
– Add ginger-garlic paste and cook till the raw smell disappears. 
– Add tomato puree and cook until the oil separates. 
– Add turmeric, red chili powder, coriander, and cumin powder. 
– Cook on medium flame for a few minutes. Add cream and kasuri methi. Mix well. 

Step 3: Combine and Serve 
– Add the sautéed mushrooms to the gravy. Mix gently. 
– Let it simmer for 3–4 minutes so the flavors meld together. 
– Garnish with chopped coriander leaves and serve hot. 

Serve Mushroom Tikka Masala with: 

  • Naan, Tandoori Roti, or Lachha Paratha 
  • Steamed Basmati Rice or Jeera Rice 
  • Fresh cucumber-onion salad or raita
