Recipe: Palak Moong Dal

Ingredients

  • 1 cup moong dal
  • 2 cups fresh spinach (palak), washed and chopped
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 green chillies, slit
  • ½ tsp garam masala
  • ½ tsp cumin seeds
  • 1 tbsp ghee
  • 2 tbsp Purti Sunlife Sunflower Oil
  • Salt to taste
  • A pinch of sugar (optional)
  • Fresh coriander for garnish

Method

Step 1: Cook the Dal

Wash the moong dal thoroughly and pressure cook until soft. Mash it lightly and keep aside.

Step 2: Prepare the Spinach

Heat a little Purti Sunlife Sunflower Oil in a pan and lightly sauté the chopped spinach. Allow it to cool before blending it into a smooth paste.

Step 4: Bring Everything Together

Add the spinach puree to the pan and cook for a few minutes. Stir in the cooked moong dal, season with salt and a pinch of sugar if preferred, and let everything simmer until the flavours blend beautifully.

Step 5: Serve Warm

Garnish with fresh coriander and enjoy with steamed rice, jeera rice or warm rotis for a comforting homemade meal.
