Ingredients
– 3 potato
– 1 cup vermicelli
– 2 teaspoons refined flour
– 1 teaspoon coriander powder
– 1 teaspoon chaat masala powder
– 1/2 cup paneer
– 1 cup Purti Soyalite oil
– 1 teaspoon cumin powder
– 1 teaspoon red chilli powder
– 1 teaspoon salt

Step 1 Pressure cook the potatoes for 3 whistles
To prepare this delicious potato recipe, put a pressure cooker on medium flame and add potatoes in it along with enough water. Close the lid and boil the potatoes for 3 whistles. Once done, let the steam release on its own and then open the lid and drain the extra water. Peel the boiled potatoes and grate in a large bowl.

Step 2 Prepare the potato masala
In the same bowl, add 1/2 teaspoon of cumin powder, coriander powder, chaat masala, chilli powder and salt. Mix well using a spoon.

Step 3 Prepare the paneer masala
Now, in a separate bowl add the grated paneer along with the remaining masala powder. Mix well all the ingredients.

Step 4 Prepare the croquettes
Then, take a handful of the potato mixture and using your hands roll it. Now, using your fingers, add some paneer mixture in the centre and close it. Roll once again gently to bind the croquette. Repeat the process to make more such croquettes.

Step 5 Prepare the flour paste
Now, take a small bowl and add 2 teaspoons of refined flour and a little water. Mix properly to make slurry or paste. Then, crush sevaiyan / vermicelli in a plate.

Step 6 Deep fry the potato croquettes
Finally, put a kadhai on medium flame and heat oil in it. When the Purti Soyalite oil is hot enough, dip the prepared potato croquettes in the flour paste gently and then dip in crushed vermicelli. Add these croquettes gently in the hot oil and deep fry until they are light brown in colour. Once done, repeat the process to make more such croquettes. Serve these crispy and hot paneer stuffed potato vermicelli croquettes with green chutney and enjoy.
