Introduction:

Sweet Corn Paturi is a modern vegetarian twist on the traditional Bengali dish called Paturi, where food is marinated in a mustard-based paste, wrapped in banana leaves, and slow-cooked to perfection. Traditionally prepared with fish like hilsa (ilish) or bhetki, this vegetarian version using sweet corn brings freshness, sweetness, and innovation to the table – making it perfect for both festive spreads and everyday indulgence.

Ingredients:

– 1 cup boiled sweet corn kernels

– 3 tablespoons grated coconut (fresh preferred)

– 2 tablespoons mustard seeds (yellow or black)

– 2 green chilies (adjust as per spice preference)

– 1 tablespoon poppy seeds (optional, for richness

– 1 tablespoon yogurt (adds a creamy texture)

– 2 tablespoons Purti Mustard Oil

– ½ teaspoon turmeric powder

– Salt to taste

– Lau Squash leaves

– Cotton thread or toothpicks for tying

Instructions:

Step 1: Prepare the Mustard-Coconut Paste

1. Soak mustard seeds and poppy seeds in warm water for 15 – 20 minutes.

2. Grind them together with green chilies, grated coconut, and a little water into a smooth paste.

Step 2: Make the Filling

3. In a mixing bowl, combine boiled sweet corn, the freshly ground paste, yogurt, turmeric, salt, and Purti Mustard Oil.

4. Mix thoroughly so that the corn is evenly coated with the mixture.

Step 3: Assemble the Paturi

5. Lightly warm the lau squash leaves over an open flame to make them pliable.

6. Place 2 – 3 tablespoons of the corn mixture in the center of each lau squash leaves.

7. Fold the leaf neatly into a square or parcel and tie it with thread or secure it using toothpicks.

Step 4: Cook the Parcels

8. Heat a flat non-stick pan or tawa and drizzle a little Purti Mustard Oil.

9. Place the parcels on the pan and cook on low flame for 5 – 6 minutes on each side until the lau squash leaf browns and the filling is steamed and aromatic.
