Amla pickle, a classic Indian condiment, is known for its tangy flavor & potential health benefits. This quick and easy recipe allows you to enjoy the deliciousness of amla pickle without the long wait.

Ingredients:

•   7 amla (gooseberry or nellikai)

•   1/4 cup Purti kachi ghani mustard oil

•   2 tsp mustard seeds

•   1 tsp methi (fenugreek seeds)

•   1 tsp fennel seeds

•   1 tsp turmeric

•   1 tsp salt (adjust to taste)

•   1 tsp kashmiri red chili powder

•   Pinch of hing (asafoetida)

Instructions:

 Step 1 : Prepare the Amla:

• Wash the amla and steam them for 10 minutes or until they open up on their own.

• Let the amla cool completely.

• Open the amla segments & remove the seeds.

• Spread the amla segments on a plate to cool completely.
Step 2 : Make the Pickle Masala:

• Heat a pan and dry roast 2 tsp mustard seeds, 1 tsp methi, and 1 tsp fennel seeds until they turn golden brown.

• Grind the roasted seeds into a fine powder using a blender.
Step 3 : Combine the Ingredients:

• Heat 1/4 cup Purti kachi ghani mustard oil in a pan.

• Once the Purti kachi ghani mustard oil is hot, add 1 tsp mustard seeds & a pinch of hing. Let it splutter.

• Turn off the stove & add the steamed amla segments.

• Sauté the amla for a minute or until it absorbs the flavors.

• Add 2 tsp chili powder, 1 tsp turmeric, and 1 tsp salt. Mix well.

• Incorporate the prepared pickle masala & mix thoroughly.

Serving:

Your instant amla pickle is ready to be served! Enjoy it with rice, roti, or as a side dish. Store the pickle in an airtight container in the refrigerator for up to a week.

Note: For a spicier pickle, you can increase the amount of chili powder. If you prefer a sweeter taste, you can add a little jaggery or sugar.
