Introduction

Egg cutlets are a popular and versatile Indian snack that can be enjoyed as a light meal or a side dish. These crispy and flavorful cutlets are made with boiled eggs, spices, and a binding agent. They are typically shallow-fried in oil until golden brown.

Ingredients:

• 5 boiled and grated eggs

• 1 finely chopped onion

• 4 finely chopped green chilies

• 1 sprig finely chopped curry leaves

• 1 tablespoon finely chopped coriander leaves

• 1/2 teaspoon garam masala

• 1/2 teaspoon coriander powder

• 1/2 teaspoon cumin powder

• Salt to taste

• 2 tablespoons gram flour

• 1 tablespoon corn flour

• 1 teaspoon ginger-garlic paste

• 1 tablespoon water

• Purti Kachi Ghani Oil for shallow frying

• Pinch of dried parsley (optional)

Instructions:

Step 1 : Prepare the Eggs:
• Boil the eggs until hard.
• Peel the eggs and grate them.

Step 2 : Combine Ingredients:
• In a large mixing bowl, combine the grated eggs, onion, green chilies, curry leaves, coriander leaves, garam masala, coriander powder, cumin powder, salt, gram flour, corn flour, ginger-garlic paste, and water.
• Mix well until a dough-like consistency is achieved.
• Add the dried parsley, if desired.

Step 3 : Shape the Cutlets:
• Take small portions of the mixture and shape them into cutlets.

Step 4 : Shallow Fry:
• Heat Purti Kachi Ghani oil in a non-stick pan over medium heat.
• Gently place the cutlets into the hot Purti Kachi Ghani Oil & fry until golden brown on both sides.
• Remove the cutlets from the pan and drain on paper towels.

Step 5 : Serve:
• Serve the hot egg cutlets with your favorite dipping sauce or chutney.
