Description:

Ingredients:
• 2 1/2 Cups Gram Flour (Besan)
• 2 1/2 Cups All-Purpose Flour (Maida)
• 500 ml Purti Vanaspati
• 5 Cups Sugar
• 2 1/2 Cups Water
• 1/4 Cup Milk
• 1 tsp Crushed Cardamom
• A handful of Chopped Almonds and Pistachios
• Polythene Sheets (Optional)
Instructions:
Step 1 : Prepare Flour: Sift together gram flour and all-purpose flour. Set aside.
Step 2 : Heat Vanaspati: In a heavy pan, heat Purti Vanaspati over medium flame. Add the sifted flour & roast, stirring continuously until the mixture turns light golden. Remove from heat & set aside.
Step 3 : Make Syrup: In a separate pan, combine milk & water. Heat over low to medium flame, add sugar, & stir until it dissolves completely. Simmer until the syrup reaches a two-thread consistency.
Step 4 : Combine Ingredients: Pour the hot sugar syrup into the roasted flour mixture. Stir vigorously until the mixture begins to form thread-like flakes. This step involves alternating between mixing & pulling the mixture apart to achieve the desired texture.
Step 5 : Set & Garnish: Transfer the mixture to a greased plate, spreading it to an even thickness of about 1 inch. Sprinkle crushed cardamom, almonds, and pistachios on top, pressing them gently into the mixture.
Step 6 : Cool & Cut: Allow the Soan Papdi to cool completely. Once set, cut into 1-inch squares. If desired, cover with polythene squares for a traditional touch.
Step 7 : Store: Place the cut pieces in an airtight container to keep them fresh.
